1/2 cup of pineapple juice
1/2 cup + 1/3 cup water
2 whole eggs + 1 egg yolk
2 tablespoons of rum

For icing

3 sticks unsalted butter, softened
1 cup, sifted powered sugar (I use less sugar because I don't like it too sweet, but add as much as you'd like!)
2 tablespoons of rum

For garnish

toasted coconut shavings
