1 anaheim or poblano pepper, diced
1 jalapeno, seeded and diced
2 Tablespoons olive oil
1/4 Cup salsa
6-8 ounces pepper jack cheese, grated
Pinch of salt and pepper
1 egg, beaten with a tablespoon of water for egg wash

Calzone/pizza dough (I wasn't happy with the dough recipe I tried, so this is my standard pizza dough recipe which is surefire.)
5 Cups (22.5 ounces) bread flour
1 1/2 Tablespoons honey or sugar
3 Teaspoons kosher salt
1 1/2 Teaspoons instant yeast
3 Tablespoons olive oil (plus more for the dough later)
1 3/4 Cups room temperature water
