1 head romaine lettuce, chopped
1/2 cucumber, chopped
1/2 red pepper, chopped
2 scallions, diced (white and green parts)
1 stalk celery, chopped
3-4 ounces feta cheese, crumbled
1 avocado, diced
Sprouts (opt.)
Chicken:
2 chicken breasts
2 Tablespoons chili powder
2 Tablespoons olive oil
Salt and pepper
Croutons:
2 Cups stale bread, chopped
3 Tablespoons olive oil
1-2 cloves garlic
Salt and pepper
Dressing:
I used my house dressing for this salad, which I recommend, but you could also just whisk together 1/4 Cup olive oil with the juice from half a lemon and season with salt and pepper for a quick, light dressing.
