Basic Bisque

Ingredients

  • 100g seafood, cleaned and shelled (choose from prawns, lobster, crayfish, crab or oysters)
  • 3 tsp canned tomato puree
  • ½ cup carrot, celery, leek and onion mirepoix
  • 2 Tbsp cooked rice
  • 1 cup fish stock
  • 1 Tbsp white wine
  • 3 tsp brandy
  • 1½ tsp butter
  • Salt and pepper to taste
