  • 8 chicken drumsticks, 1/4 cup plain flour, 2 Tblspn olive oil, 4 bacon rashers, chopped, 4 small brown onions, quartered, 2 cloves garlic, crushed, 1/2 cup red wine, 1/2 cup chicken stock, 2 Tblspn tomato paste, 500g button mushrooms, stems removed, 1 Tblspn chopped fresh thyme, 1/4 cup brandy, salt and pepper, for seasoning, Extra fresh thyme, to garnish, mashed potato, to serve.
