French Onion Soup


  • 80g butter
  • 9 white or brown onions, sliced into rings
  • 1 litre dry white wine
  • freshly ground black pepper
  • 2 tablespoons brandy
  • 6-8 x 2cm thick slices sourdough bread
  • 125g gruyere cheese, grated
  • 1.5 litres vegetable (or chicken) stock
