  • 785g skinless, boneless chicken breast fillets, cut into 2.5cm chunks
  • 2 large onions, thinly sliced
  • 65g dried apricots, coarsely chopped
  • 50g raisins
  • 300ml low salt chicken stock
  • 2 tablespoons tomato puree
  • 2 tablespoons lemon juice
  • 2 tablespoons plain flour
  • 1 1/2 teaspoons ground ginger
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon curry powder
  • 1/8 teaspoon cayenne pepper
  • 175g couscous
  • 250ml boiling water
