Beer Braised Beef Stew With Colcannon

Ingredients

  • 1 tablespoon vegetable oil
  • 1 (3 pound) beef shoulder, trimmed of fat and cut into 1cm cubes

  • 150g coarsely chopped onion
  • 125g coarsely chopped carrot

  • 2 bay leaves
  • 1 teaspoon dried thyme

  • 1/2 teaspoon ground black pepper
  • 2 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • Colcannon:
  • 3 rashers bacon
  • 1kg potatoes, peeled and cut into chunks
  • 175g thinly sliced cabbage
  • 4 tablespoons milk, warmed
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons minced fresh parsley
