- Salsa:
- 2 tbsp Rubicon watermelon juice drink
- 200g/7oz watermelon, peeled, deseeded and finely chopped
- 1/2 cucumber, deseeded and finely chopped
- 2tbsp chopped fresh mint
- Pinch of salt, pepper and sugar
