Meaty Lasagne With Aubergine

Ingredients

  • 12 Sheets of Lasagne Pasta
  • Grated Cheese for on top (I used a cheddar and mozzarella mix)
  • ---
  • For the Meaty Filling:
  • 1kg Minced Beef
  • 1 Aubergine (diced)
  • 1 Onion (diced)
  • 1 Celery Stick (chopped)
  • 400g Chopped Tomatoes
  • 400g Passata
  • Dash of Red Wine
  • 12 Basil Leaves (chopped)
  • 1 tsp Dried Oregano
  • 1 Beef Stock Cube
  • 1 tbsp Olive Oil
  • ---
  • For the White Sauce:
  • 125g butter
  • 800ml milk
  • 75g plain flour
  • 1 egg
  • Pinch of Nutmeg
  • Pinch of Salt

I Wanted To Make Lasagne For The Family, But None Of The Recipes I Could Find Worked With The Ingredients I Wanted To Use, So I Improvised And Came Up With This!
