Ingredients

  • 4 pieces of haddock fillet, about 140 g (5 oz) each
  • 20 g (¾ oz) parsley
  • 1 small onion, thinly sliced
  • 1 carrot, thinly sliced
  • 6 black peppercorns
  • 300 ml (10 fl oz) semi-skimmed milk
  • 750 g (1 lb 10 oz) potatoes, peeled and cut into chunks
  • 1 large leek, thinly sliced
  • 2 courgettes, cut into thin sticks
  • 25 g (scant 1 oz) butter
  • 25 g (scant 1 oz) plain flour
  • finely grated zest and juice of ½ lemon
  • salt and pepper
  • chopped parsley to garnish
  • lemon wedges to serve
