Mexican Tostadas

Ingredients

  • 2 chicken breasts, about 500 g (1 lb 2 oz) in total, skinned
  • 2 tbsp extra virgin olive oil
  • 2 red peppers, seeded and coarsely chopped
  • 1 onion, coarsely chopped
  • 2 garlic cloves, thinly sliced
  • 1 tbsp mild chilli powder
  • 2 tsp paprika
  • 1 tsp ground cumin
  • 1 can chopped tomatoes, about 400 g
  • pinch of sugar
  • 8 corn tortillas
  • 1 can borlotti or pinto beans, about 425 g
  • salt and pepper
  • To serve
  • 1 tomato, diced
  • pickled jalapeño chillies (optional)
  • 125 g (4 ½ oz) iceberg lettuce, shredded
  • 8 radishes, sliced
  • 4 tbsp plain low-fat yogurt
  • Tabasco or other hot chilli sauce
