Rocket Salad With Pears, Walnuts, Bacon And Blue Cheese

Ingredients

  • 1 bunch or bag of rocket leaves
  • 1 pear, cubed or sliced lengthwise
  • 2 rashers of crisp fried bacon
  • 80g gorgonzola or blue cheese, cubed/crumbled
  • 60g toasted pine nuts
  • 2 thinly sliced cooked beetroot (optional)
  • For the balsamic dressing
  • 125ml cup good balsamic vinegar
  • 65ml olive oil
  • 1 Tbsp dijon mustard
  • 1 tbsp honey
  • 1/4 tsp dried thyme
  • 1 clove garlic, pressed or very finely chopped, optional
  • a good grind of sea salt
  • a grind of fresh pepper
