Ingredients
- 1 bunch or bag of rocket leaves
- 1 pear, cubed or sliced lengthwise
- 2 rashers of crisp fried bacon
- 80g gorgonzola or blue cheese, cubed/crumbled
- 60g toasted pine nuts
- 2 thinly sliced cooked beetroot (optional)
- For the balsamic dressing
- 125ml cup good balsamic vinegar
- 65ml olive oil
- 1 Tbsp dijon mustard
- 1 tbsp honey
- 1/4 tsp dried thyme
- 1 clove garlic, pressed or very finely chopped, optional
- a good grind of sea salt
- a grind of fresh pepper
