Ingredients

  • ¼ cup (60 ml) vegetable oil
  • 1 onion, thinly sliced
  • â…“ cup (50 g) raisins
  • 1 cinnamon stick, broken in half
  • 8 black peppercorns
  • 6 cloves
  • 6 green cardamom pods, crushed and pods discarded
  • 1 tablespoon coriander seeds, lightly crushed
  • 2 teaspoons ground cumin
  • ½ teaspoon cayenne pepper
  • 4 garlic cloves, crushed
  • 200 g new potatoes, scrubbed and cubed
  • 1 carrot, peeled and sliced
  • 150 g thin green beans, trimmed and chopped
  • 1 zucchini, sliced
  • 1 cup (150 g) frozen peas
  • ¾ cup (200 g) Greek-style yogurt
  • 630 ml water
  • 1½ cups (300 g) basmati rice, rinsed
  • pinch of saffron threads
  • 1 tablespoon flaked almonds, lightly toasted
  • 10 sprigs of fresh coriander
  • 3 hard-boiled eggs, quartered
