Fruit Cake

Ingredients

  • 250 g (1 cup) butter
  • 280 g (1 ½ cups) brown sugar
  • 6 eggs
  • 250g (2 cups) plain flour, sifted
  • 375g (3 cups) sultanas
  • 300g (2 cups) currants
  • 375g (3 cups) raisins, roughly chopped
  • 420g (2 cups) glacé cherries, cut in halves
  • 140g (3/4 cup) mixed candied peel, chopped
  • 80g (3/4 cup) ground almonds
  • Finely grated rind of 1 large orange and 1 large lemon
  • 80 ml (1/3 cup) rum, whisky or brandy, for sprinkling over the cake before icing

  • 3 tablespoons apricot jam, heated and sieved
  • 1 recipe of Royal Icing (recipe on this website)
