Ingredients

  • 1 large eggplant sliced into 1 cm slices
  • 600g lamb mince
  • 2 cloves of garlic, minced
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1 tsp cinnamon
  • 1 tsp cayenne pepper
  • 1 400g tin chopped tomatoes
  • 1 tsp tomato puree
  • 1 bay leaf
  • ½ tsp thyme
  • ½ tsp oregano
  • 250ml milk
  • 25g butter
  • 25g flour
  • a pinch of grated nutmeg
  • 30g crumbled feta cheese (grated parmesan or cheddar can be used)
  • 250g ricotta
  • 1 egg
