Grilled Lemongrass Chicken

Ingredients

  • 1 to 1.3 lb chicken drumlets, wings, thighs or breast meat cut into workable pieces
  • MARINADE:
  • 3 Tbsp. finely-minced lemongrass (fresh or frozen-prepared), available at Asian food stores
  • 3 Tbsp. sherry (OR cooking sherry)
  • 2 Tbsp. soy sauce
  • 3 Tbsp. fish sauce (available in tall bottles at Asian food stores)
  • 1 thumb-size piece ginger, galangal, OR Thai ginger, grated
  • 4 cloves garlic, minced
  • 1 fresh red chili, minced OR 1/2 tsp. dried crushed chili
  • 1/2 Tbsp. coursely-ground black pepper
  • 2+1/2 Tbsp. brown sugar
  • LEMONGRASS-SWEET CHILI SAUCE:
  • 1/4 cup water
  • 3 Tbsp. finely-minced lemongrass (fresh or frozen-prepared)
  • 1/2 cup rice vinegar
  • 1/2 cup white sugar
  • 1/2 to 1 Tbsp. dried crushed chili (1 Tbsp. makes very spicy sauce)
  • 3 Tbsp. fish sauce
  • 3 cloves garlic, minced
  • 2 Tbsp. sherry (OR cooking sherry)
  • 1 Tbsp. cornstarch dissolved in 3-4 Tbsp. cool water
