- MARINADE:
- 3 Tbsp. finely-minced lemongrass (fresh or frozen-prepared), available at Asian food stores
- 3 Tbsp. sherry (OR cooking sherry)
- 2 Tbsp. soy sauce
- 3 Tbsp. fish sauce (available in tall bottles at Asian food stores)
- 1 thumb-size piece ginger, galangal, OR Thai ginger, grated
- 4 cloves garlic, minced
- 1 fresh red chili, minced OR 1/2 tsp. dried crushed chili
- 1/2 Tbsp. coursely-ground black pepper
- 2+1/2 Tbsp. brown sugar
- LEMONGRASS-SWEET CHILI SAUCE:
- 1/4 cup water
- 3 Tbsp. finely-minced lemongrass (fresh or frozen-prepared)
- 1/2 cup rice vinegar
- 1/2 cup white sugar
- 1/2 to 1 Tbsp. dried crushed chili (1 Tbsp. makes very spicy sauce)
- 3 Tbsp. fish sauce
- 3 cloves garlic, minced
- 2 Tbsp. sherry (OR cooking sherry)
- 1 Tbsp. cornstarch dissolved in 3-4 Tbsp. cool water
