2 tablespoons extra virgin olive oil
3 cups finely diced onion
3 cups (about 6 oz.) sliced fresh shitake mushrooms
3 tablespoons minced lemongrass (only use bottom 3 to 4 inches of the stalk)
1 teaspoon minced garlic
4 cups low-sodium chicken or vegetable stock
tsp low-sodium soy sauce
Kosher salt, to taste
teaspoon sherry vinegar
teaspoon white pepper
Cilantro leaves, for garnish
Chopped scallions, for garnish
