1½ kg rolled beef brisket (uncorned)1 litre beef stock
2½ litre cold water
2 bay leaves
half an onion studded with 3 cloves
3 carrots, peeled and cut into 6cm lengths
2 leeks, washed and cut into 6cm lengths
12 small chat potatoes
1 cup Italian parsley leaves
pots of sea salt, Dijon mustard, cornichons and horseradish cream to serve
