Ingredients
- 2 lbs boiling beef (brisket)
- soup greens, such as carrots, celeriac, parsley root,
- enough for about1 1 1/2 ltrs. of water
- 2 bay leaves, some peppercorns
- 1 cabbage (we call it 'Wirsing' = savoy cabbage)
- 2 ltrs. water
- salt - about one teaspoon
- baking soda - just a pinch
- 1 onion
- about 1/4 pound smoked pork belley, as lean as possible
- 1 1/2 tablespoon flour
- nutmeg and white pepper
- Sauce
- fresh horseradish (about 250 gram)
- 1/4 litre or so of meat stock from boiled beef
- some flour, cream, sour cream, salt, pepper, Dijon mustard
- (there are several ways to make the sauce)

This Is A Typical 'Hessian' Dish - But Eaten In Most Parts Of Germany, Too, Because People Move From One Part Of Germany To Another And Take Their Recipes With Them. This Is A Typical Winter Food - And I Love It..
