Boss Hoggs Bbq’ed Brisket With Rascole Slaw Recipe

Ingredients

  • 1 8-9 pound beef brisket
  • ¼ cup of granulated garlic
  • ¼ cup of onion powder
  • 5 tbls. of ground black pepper
  • 4 tbls. of kosher salt
  • 2 tsp. of dried mustard
  • 3 tbls. of honey
  • 4 bay leaves
  • 1 cup of olive oil
  • 2 quarts of beef stock
  • 4 cups of a fine spicey BBQ sauce
  • A small amount of pale roux
  • --SLAW---
  • 2 large heads of napa cabbage
  • 2 large carrots
  • 2 red bell pepper
  • 3 tart green apples
  • 1 cup of red raisons (rehydrated)
  • ½ cup of Greek type yogurt
  • 1 ½ cups of real mayonnaise
  • The juice of 2 lemons
  • 3 tbls.of powdered sugar
  • ¼ cup of red wine vinegar
  • 2 tsp. of Dijon mustard
  • Fresh scallions, mint and dill
  • salt and coarse black pepper
  • ---HAZZARD HASH---
  • 3 lbs. of red potatoes
  • 2 large onions
  • 3 green bell pepper
  • A pound of smoked bacon, of course
  • 1 cup of cheddar cheese (shredded)
  • 1 cup of M. Jack cheese (shredded)
  • oil for frying
  • More dry granulated garlic
  • Dried oregano
  • Fresh chopped parsley
  • salt and a touch of cayenne pepper
