Ingredients

• 1 1/2 cups whole wheat pastry (cake) flour (plus more for dusting the work surface)
• 1/4 cup cornmeal
• 1/2 teaspoon baking powder
• 1/4 teaspoon salt
• 3/4 cup granulated sugar
• 2 teaspoons lemon zest
• 6 ounces (12 tablespoons) unsalted butter, chilled and diced
• 2 tablespoons fresh lemon juice
• 1 egg yolk
• 1/2 teaspoon vanilla extract
