- 1 small yellow onion, very finely chopped
- 1/2 cup dry white wine (such as sauvignon blanc)
- 1 tablespoon coarsely chopped fresh tarragon (or 1 teaspoon dried)
- 1/2 teaspoon dried thyme
- 1 cup heavy whipping cream
