  • 1 tablespoon butter
  • 1 small yellow onion, very finely chopped
  • 1/2 cup dry white wine (such as sauvignon blanc)
  • 1 tablespoon coarsely chopped fresh tarragon (or 1 teaspoon dried)
  • 1/2 teaspoon dried thyme
  • 1 cup heavy whipping cream
