Ingredients

  • PAELLA:
  • 4 C. good-quality canned chicken broth
  • 1/2 tsp. saffron threads
  • 1/4 C. extra-virgin olive oil
  • 1/2 lb. boneless, skinless chicken breast, cut into 3/4-inch cubes
  • 1 red bell pepper, cored, seeded, and cut into 1/4-inch dice
  • 1 green bell pepper, cored, seeded, and cut into 1/4-inch dice
  • 1/2 yellow onion, peeled and cut into 1/4-inch dice
  • 1 Tbs. minced garlic
  • Salt
  • Freshly ground black pepper
  • 2 C. long-grain white rice
  • 1/2 lb. medium-sized shrimp, peeled and deveined
  • 1 C. shelled fresh peas
  • 1 Tbs. minced fresh parsley
  • 1 tsp. chopped fresh chives, (dill, tarragon, or a mixture)
  • SHERRY-GARLIC VINAIGRETTE:
  • 1/4 C. minced fresh chives
  • 3 Tbs. minced fresh parsley
  • 1 Tbs. minced garlic
  • 1/4 C. sherry vinegar
  • Salt
  • Freshly ground black pepper
  • 1/2 C. extra-virgin olive oil
  • 4 C. mixed baby salad greens
