Salmon Poached In White Wine And Orange

Ingredients

  • 5 oz. Salmon
  • 4 C. Orange Juice
  • 1 C. White Wine
  • 1 C. water
  • Powdered Ginger, enough to coat salmon
  • black pepper to taste
  • Maple Sugar, to taste
  • cayenne pepper, to taste (careful not to hide the other flavors)
  • 1/2 lemon
  • bouquet garni- bay leaf, whole white and black peppercorns and thyme
  • 6 stalks of asparagus, or more
  • dried blueberries, garnish
  • thyme sprig, garnish
