Spicy Corn Chowder (25 Mins, Vegetarian)

Ingredients

  • 1 cup of milk (250ml)
  • 1 cup of veggie broth (250ml)
  • A large knob of butter
  • Half an onion, diced
  • 1 tbsp of all purpose flour (or 1 tbsp of rice flour to make it gluten-free)
  • 1 can of corn (10 oz or 435g), rinsed and drained
  • Half a red bell pepper (or your favourite flavour of course!)
  • 1 chili pepper (jalapeño), seeded for less heat if desired, finely chopped
  • 1 tsp cumin
  • 2 tsp curry powder
  • Half a cup cheddar cheese (around 50g)
  • 2 shallots/spring onions
