  • 1 small onion
  • 50g cheese (cheddar works well, but your favourite will no doubt work too)
  • 1 tbsp olive oil
  • Balsamic vinegar/sauce (if you have it)
  • ½ cup chopped basil
  • 1 tsp red pepper flakes
  • pinch of salt and pepper
  • 2 eggs
  • Optional: crusty bread
