Ingredients
- 50g spinach or mixed leaves
- ½ tin chopped tomatoes or 4 real chopped tomatoes
- 1 small onion
- 50g cheese (cheddar works well, but your favourite will no doubt work too)
- 1 tbsp olive oil
- Balsamic vinegar/sauce (if you have it)
- ½ cup chopped basil
- 1 tsp red pepper flakes
- pinch of salt and pepper
- 2 eggs
- Optional: crusty bread
