- 1 bouquet garni (see note below)
- 1 teaspoon peppercorns
- 1 pinch saffron (optional)

- 1 leek, white part only, thinly sliced
- 1/4 cup butter
- 1 tablespoon tomato paste
- 3 cups peeled and diced butternut squash
- 1/4 cup 35% cream
- 1 tablespoon fresh tarragon
- Salt and pepper
