Ingredients

  • 1 bag (10 oz) fresh spinach, trimmed
  • 1 can (14 oz) artichoke hearts, drained, rinsed and halved
  • 1 1/2 cups shredded Fontina or mozzarella cheese

Sausage Sauce

  • 12 ounces mild or spicy Italian sausages
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, finely diced
  • 1 stalk celery, finely diced
  • 1 1/2 teaspoons dried oregano
  • 1/4 each salt and pepper
  • 1 can (28 oz) diced tomatoes
  • 1/4 cup tomato paste

Bechamel Sauce

  • 2 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 1/4 cups milk
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • pinch pepper
  • pinch nutmeg
