- 1/4 cup white wine vinegar (60 mL)
- 2 tablespoons brown sugar (30 mL)
- 2 teaspoons kosher salt (10 mL)
- 1 tablespoon minced ginger (15 mL)
- 1 tablespoon minced garlic (15 mL)
- 1 teaspoon yellow mustard seeds (5 mL)
- 1 teaspoon freshly ground black pepper (5 mL)
- 1 teaspoon ground cumin (5 mL)
- 1 teaspoon cayenne pepper (5 mL)
- 1/2 teaspoon curry paste (2 mL)
- pinch of saffron
- 1/4 cup olive oil (60 mL)
- 4 cups chopped Roma tomatoes (1 L)
- 1 1/2 cups tomato juice, fresh or bottled (375 mL)
