Ingredients

Crispy Glazed Pork Belly

  • 1 cup brown sugar
  • 1 1/2 cups cider vinegar
  • 4 cups water
  • 3 bay leaves
  • 1 teaspoon black peppercorns, whole
  • 5 cloves
  • 1 tablespoon salt
  • 1 1/2 pounds pork belly, cut into 1 inch cubes

Sauteed Mushrooms

  • 1 1/2 tablespoons vegetable oil
  • 1 1/2 tablespoons butter
  • 1 clove garlic, smashed
  • 3 tablespoons thyme, leaves picked and roughly chopped
  • 1 pound crimini mushrooms, quartered
  • 1/3 cup balsamic vinegar
  • salt and pepper

Aromatic Lentils

  • 1 1/2 cups dried green lentils, rinsed and drained
  • 3 cups water
  • 2 shallots, smashed
  • 3 cloves garlic, smashed
  • 5 sprigs of thyme
  • 3 bay leaves
  • 2 ripe tomatoes, diced
  • 1/4 bunch chives, thinly sliced
  • salt and pepper
