Crispy Apricot Ravioli

Ingredients

Apricot-Almond Filling

  • 1/3 cup of whole blanched almonds – (75ml)
  • 4 ounces of dried apricots – (125ml)
  • 3 ounces of pure almond paste – (90ml)
  • 3 tablespoons of softened unsalted butter – (45ml)
  • 3 teaspoons of Di Saronno Amaretto or almond extract – (15ml)

Apricot Coulis

  • 4 ounces dried apricots – (125ml)
  • 1/2 cup sugar – (125ml)
  • 1 1/2 cups of cold water – (375ml)
  • 1 tablespoon of fresh lemon juice – (15ml)

Ravioli

  • 1 large egg
  • 1 tablespoon of water – (15ml)
  • Use your favourite pasta dough
  • 4 cups of vegetable oil for frying – (1liter)
  • Confectioners sugar for sprinkling ravioli
  • Mint sprigs for garnish
