Pesto Glazed Fish Kabobs On Rice With Asparagus Wraps
- 8 Bamboo or metal skewers
- 1 3/4 pounds or 800 g firm white fish (e.g. halibut or haddock)
- 1/2 cup basil pesto (from a jar)
- 1 tablespoon maple syrup
Asparagus Wraps
- 24 pieces of asparagus (1 lb / 450 g)
- 1 tablespoon butter for all
- 12 slices of whole wheat bread
- 1 teaspoon garlic powder for all
- 1 can cream of mushroom soup (10 oz / 284 mL) You can also use cream of asparagus soup, but itâs my second choice.
- Toothpicks
- 1 1/2 cups basmati rice
- 3 cups water
- Skewers
- Marinated fish chunks
- Cooking spray
- Fish cage (optional⦠but in my opinion a must)
