Chicken Taco Filling
- 1/2 cup vegetable oil (125 ml)
- 1 1/2 tablespoons chopped garlic (22 ml)
- 1/4 teaspoon ground cumin (1 ml)
- Juice of 1 ½ limes
- Salt and pepper, to taste
- Oil, for brushing the pan
- 3 medium chicken breasts, sliced
- 5 slices regular smoked breakfast bacon, large dice
- 1 red onion, sliced
- 2 poblano peppers
- 2 red bell peppers
- 1 green bell peppers
- Handful of grated mozzarella cheese, or to taste
Assembly
- Taco filling
- 12 corn tortillas (5-inches), medium thickness
- 1 1/2 cups tomato salsa (375 ml)
- 1 1/2 cups guacamole (375 ml)
- 1 1/2 cups onions, slices diced (375 ml)
- 1 Bunch fresh coriander, leaves left whole or chopped
- Lime wedges
