Farmer's Market Fruit Pie

Ingredients

Pastry

  • 1 3/4 cups all purpose flour (425 ml)
  • 1/3 cup cake and pastry flour (80 ml)
  • 1/4 teaspoon salt (1 ml)
  • 2/3 cup to ¾ cup water, depending on humidity ice water (150 ml to 175 ml)
  • 1/2 cup butter (125 ml)
  • 1/4 cup chilled shortening (60 ml)

Filling

  • 4 cups thinly sliced firm apples (Fuji, Gala)(5 medium apples peeled, cored, quartered) (1 litre)
  • 2 1/2 cups blueberries (625 ml) (frozen blueberries are okay)
  • 2 1/2 tablespoons cornstarch (37 ml)
  • 1/3 cup Demerera sugar (or brown sugar) (75 ml)
  • Juice of 1/2 lemon
  • 1 Grated zest of 1 lemon
  • 1 teaspoon cinnamon (5 ml)

Glaze

  • 1 egg
  • 1 tablespoon water
  • coarse sugar to sprinkle on top of pie, optional
