Farmer's Market Fruit Pie Recipe

Ingredients

  • 1 3/4 c. all purpose flour (425 ml)
  • 1/3 c. cake and pastry flour (80 ml)
  • 1/4 tsp salt (1 ml)
  • 2/3 c. to 3/4 c. water, depending on humidity ice water (150 ml to 175 ml)
  • 1/2 c. butter (125 ml)
  • 1/4 c. chilled shortening (60 ml)
  •     Filling
  • 4 c. thinly sliced hard apples (Fuji, Gala)(5 medium apples peeled, cored, quartered) (1 litre)
  • 2 1/2 c. blueberries (625 ml) (frzn blueberries are okay)
  • 2 1/2 Tbsp. cornstarch (37 ml)
  • 1/3 c. Demerera sugar (or possibly brown sugar) (75 ml)
  • 1 x juice of 1/2 lemon
  •     Grated zest of 1 lemon
  • 1 tsp cinnamon (5 ml)
  •     Glaze
  • 1 x egg
  • 1 Tbsp. water
  •     coarse sugar to sprinkle on top of pie, optional
