Ingredients
- 1Â 3/4 c. all purpose flour (425 ml)
- 1/3 c. cake and pastry flour (80 ml)
- 1/4 tsp salt (1 ml)
- 2/3 c. to 3/4 c. water, depending on humidity ice water (150 ml to 175 ml)
- 1/2 c. butter (125 ml)
- 1/4 c. chilled shortening (60 ml)
- Â Â Filling
- 4 c. thinly sliced hard apples (Fuji, Gala)(5 medium apples peeled, cored, quartered) (1 litre)
- 2Â 1/2 c. blueberries (625 ml) (frzn blueberries are okay)
- 2Â 1/2 Tbsp. cornstarch (37 ml)
- 1/3 c. Demerera sugar (or possibly brown sugar) (75 ml)
- 1 x juice of 1/2 lemon
- Â Â Grated zest of 1 lemon
- 1 tsp cinnamon (5 ml)
- Â Â Glaze
- 1 x egg
- 1 Tbsp. water
- Â Â coarse sugar to sprinkle on top of pie, optional
