- 1/2 cup finely chopped mixed fresh herbs (i.e. parsley, chervil, basil, chives, tarragon, and thyme) â (125ml)
- 1 tablespoon fine fresh breadcrumbs â (15ml)
- Salt and freshly ground pepper to taste
- 1 pound Cappelletti Pasta Dough â (500grams)
- 1 large egg yolk beaten lightly
- Pot of boiling water
Sauce
- 1/3 pound unsalted butter â (300grams)
- Salt to taste
- 1/2 pound asparagus, parboiled for 1-2min until tender, then cut into1 inch pieces â (250grams)
- 4 tablespoons of freshly grated Parmesan cheese â (60ml)
- Basil sprigs for garnish
