- 2 bay leaves
- 2 tablespoons freshly squeezed lemon juice
- 3 tablespoons fresh sage, finely chopped
- A splash of Canadian whiskey (to taste)
- 2 ounces maple syrup
- 2 tablespoons brown sugar
- 3 tablespoons cider vinegar
For the Trout
- 4 Whole trout (approx. 8-10 oz.) de-boned
- 1 lemon, thinly sliced
- 4 sprigs Italian flat-leaf parsley
- Sea Salt and fresh cracked pepper, to taste
