- 1/2 cup cup dry shiitake mushrooms (or fresh enoki mushrooms)
- 1 cup 1 cup vegetable or chicken broth (taken from broth for soup)
- 2 containers 2 cartons vegetable or chicken broth (30 oz or 900 mL each)
- 1 teaspoon 1 tsp fresh ginger (from a jar)
- 1 teaspoon 1 tsp fresh garlic (from a jar)
- 1/4 cup cup miso paste (Japanese soya bean paste found with Asian foods)
- 4 4 chicken breasts, boneless skinless (1 1/2 lbs or 675 g)
- 1 teaspoon 1 tsp canola oil
- Aluminum foil
- 2 packages 2 pkgs (10 oz or 300 g) Udon noodles Japanese thick wheat noodles usually found fresh in your deli or dairy section. You can replace with fresh Shanghai noodles.
- 4 4 green onions
- Previously soaked mushrooms and broth
- 1 pound 1 lb or 450 g precut carrots and celery
Veggie Dip
- 1/2 cup cup lowest fat mayonnaise
- 1/2 cup cup fat-free sour cream
- 1 teaspoon 1 tsp Mrs. Dash Garlic and Herb Seasoning
