Spinach & Feta Quiche

Ingredients

  • 3 cups all-purpose flour
  • 1/2 teaspoon salt
  • 8 ounces unsalted butter, cold,cut into small pieces
  • 1 large egg
  • 6 -8 tablespoons ice water
  • 3/4 cup shredded gruyere cheese(or Swiss or whatever)

  • Filling

    • 2 (10 ounce) packages frozen spinach, thawed
    • 1 tablespoon unsalted butter
    • 2 tablespoons olive oil
    • 1/4 cup finely diced onion
    • 1 cup diced scallion, green and white part
    • 1 clove garlic, minced
    • 2/3 cup chopped fresh dill
    • 1 teaspoon fresh ground black pepper
    • 3 large eggs
    • 1 cup half-and-half cream
    • 1/2 cup heavy cream
    • 6 ounces feta
    • brined kalamata olive, for garnish
    • 1 sprig dill, for garnish
