Baked Capon with Pearl Onions
Ingredients
2 gallons cold water1 cup kosher salt3/4 cup sugar1 tablespoon peppercorn1 capon, about 6 to 8 pounds(mine was 4 1/2 lbs)3/4 lb potato, peeled and diced white vinegar2 tablespoons butter1 bay leaf juniper berries(I omitted) paprika(I used about 2 1/2 T) cinnamon(I used 1/2 tsp & will a little less next time)1/2 lb chestnuts, boiled and peeled(I also broke mine apart coarsely)1 golden delicious apple, chopped3 tablespoons breadcrumbs(I used gluten-free bread) salt & freshly ground black pepper extra virgin olive oil2 lbs white pearl onions, peeled1 cup dry red wine
