Ingredients

Pork Loin

  • 1 pound Pork Loin Roast, bone in 3 ½ - 4 lbs.
  • 1/4 cup balsamic vinegar
  • 1/4 cup white wine
  • 1/4 cup dijon mustard
  • 1/4 cup honey
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • salt and pepper
  • 2 tablespoons olive oil
  • 1/2 cup white wine
  • 1/2 cup beef stock

Glazed Root Vegetables

  • 1 tablespoon olive oil
  • 1 medium parsnip, peeled and cut into 2 inch pieces
  • 1/2 medium turnip, peeled cut into 2 inch pieces
  • 1 large carrot, peeled and cut into 2 inch pieces
  • 1 leek, cleaned and cut into 0.5 inch rounds
  • 2 cups brussel sprouts, sliced in half
  • 1 tablespoon butter
  • 2 sprigs fresh thyme
  • 1/4 cup white wine
  • 1 tablespoon honey
  • salt and pepper

Apple and Endive Salad with Honey Cayenne Pecans

  • 1/4 cup honey
  • 1/2 teaspoon cayenne
  • 1 cup whole peacans
  • 3 heads belgium endive, julienned
  • 1 Granny Smith apple, peeled and julienned
  • juice of a 0.5 lemon
  • 2 tablespoons olive oil

Bread Stuffing

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh sage
  • 1/2 loaf country bread, torn into bite size pieces
  • 1/2 cup reserved pan juices, from pork roast
  • salt and pepper
