- 2 tablespoons prepared horseradish
- 1 tablespoon lemon juice
- Salt and pepper to taste
Lemon Shallot Vinaigrette
- 1 shallot, finely diced
- 1 lemon, juice and zest
- 1 teaspoon Dijon mustard
- 1/2 cup olive oil
- Salt and freshly ground black pepper
Salad
- 3 cups arugula, loosely packed
- 1 cup radishes, thinly sliced
- 1 yellow pepper, julienned
- Garnish
- 3 ounces pecorino Romano, shaved into long strips with a peeler.
- 2 tablespoons Aged Balsamic vinegar
