Spiced Bison Carpaccio on Salad with Aioli

Ingredients

Dry Rub

  • 1 teaspoon chile powder
  • 1 teaspoon cayenne pepper
  • 1 tablespoon kosher salt
  • 1 tablespoon fresh ground black pepper
  • 2 tablespoons chopped thyme

Carpaccio

  • 12 ounces bison strip loin, cleaned and trimmed
  • 2 tablespoons olive oil

Horseradish Aioli

  • 1/2 cup mayonnaise
  • 2 tablespoons prepared horseradish
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Lemon Shallot Vinaigrette

  • 1 shallot, finely diced
  • 1 lemon, juice and zest
  • 1 teaspoon Dijon mustard
  • 1/2 cup olive oil
  • Salt and freshly ground black pepper

Salad

  • 3 cups arugula, loosely packed
  • 1 cup radishes, thinly sliced
  • 1 yellow pepper, julienned
  • Garnish
  • 3 ounces pecorino Romano, shaved into long strips with a peeler.
  • 2 tablespoons Aged Balsamic vinegar
