  • plain flour, for dusting
  • salt and cracked black pepper
  • 2 tablespoons olive oil
  • 1 onion, chopped roughly
  • 1 carrot, chopped roughly
  • 1 stick celery, chopped roughly
  • 2 cloves garlic, finely chopped
  • 4 cups (1L) beef stock
  • 1/3 cup (80ml) red wine (optional)
  • 400g can chopped tomatoes
  • 1/3 cup chopped flat-leaf parsley
  • instant polenta or mashed potato, to serve
