Ingredients

  • 2 tsp black peppercorns
  • 2 cloves garlic, halved
  • 1 bunch coriander, leaves picked, stems and roots roughly chopped
  • 2 limes, juiced
  • 2 tbs fish sauce
  • 600g skinless roast turkey or barbecued chicken, finely shredded
  • 2 eschalots or 1/2 small red onion, thinly sliced
  • 35g (1/2 cup) shredded coconut
  • 1 1/2 tbs caster sugar
  • 250g green beans, trimmed, halved
  • 2 Lebanese cucumbers, halved lengthwise, seeded, thinly sliced
  • 1/2 cup mint leaves
  • 1 pink grapefruit, segmented, cut into 1cm pieces
