Ingredients

  • 3 cups (750ml) hot chicken stock
  • 2 tbs olive oil
  • 1 onion, thinly sliced
  • 2 garlic cloves, finely chopped
  • 500g turkey breast fillet (see note), cut into strips
  • 1 1/2 cups (300g) long-grain rice
  • 1 cinnamon quill
  • 1/3 cup (50g) dried cranberries
  • 1/3 cup unsalted shelled pistachios, roughly chopped
  • 1/4 cup chopped coriander leaves
