Ingredients

  • 5 rounds (14.5cm-diameter) pita bread, split in half
  • 1/2 (about 125g) baby cos lettuce, leaves separated, washed, dried, coarsely torn
  • 1 Lebanese cucumber, coarsely chopped
  • 1 x 200g punnet grape tomatoes, halved lengthways
  • 2 green shallots, ends trimmed, finely chopped
  • 1/2 cup firmly packed coarsely chopped fresh continental parsley
  • 1/3 cup loosely packed fresh mint leaves, finely shredded
  • 1/4 cup loosely packed coarsely chopped fresh coriander
  • Dressing

  • 125ml (1/2 cup) extra virgin olive oil
  • 60ml (1/4 cup) fresh lemon juice
  • 2 garlic cloves, crushed
  • 1/4 tsp ground cumin
