Winter ceviche of kingfish and salmon

Ingredients

  • 1/4 cup (60ml) freshly squeezed orange juice
  • 2 tbs lime juice
  • 2 tbs olive oil
  • 2 tsp sesame oil
  • 1 tbs fish sauce
  • 300g each sashimi-grade (see note) kingfish and salmon fillet, thinly sliced
  • 1 long red chilli, seeds removed, finely chopped
  • 1 tbs roughly torn coriander leaves
  • 1 tbs small mint leaves
  • 1 small red onion, very thinly sliced
  • 2 tbs pomegranate seeds (optional, or use 1 orange or pink grapefruit segment, broken into small pieces)
