1/2 cup lightly packed fresh cilantro leaves, coarsely chopped
1/2 cup thinly sliced scallions (about 6 medium scallions)
1/4 cup white vinegar
2 Tbs. honey
1 Tbs. ground ginger
Kosher salt and freshly ground black pepper
2 sides of salmon (3 lb. each), skin and pin bones removed
