Autumn Cream of Onion Soup with Brandy and Cider

Ingredients

  • 2 tablespoons Butter
  • 2 tablespoons Corn or Peanut Oil
  • 4 large Onion very thinly sliced
  • 2Leeks white part and 1 inch green, split open lengthwise, washed well, and thinly sliced
  • 4 cups Vegetable Stock
  • 1 cup Cider (fresh) cooked down to 1/4 cup
  • 1/4 cup Brandy (Cognac)
  • 2 mediumOrganic Russet Potato peeled and diced
  • 1 bulbOrganic Garlic cloves separated and peeled
  • 2Bay Leaves
  • 2 teaspoonsThyme fresh or dried (1 teaspoon)
  • 1 tablespoon Miso (light) or soy bean paste
  • 1 1/2 cups Crme Frache (see recipe below)
  • Nutmeg (fresh ground) to taste
  • 2 tablespoons cornstarch -
  • 1/3 cup Heavy Cream (whipping)
  • Scallions finely chopped for garnish

Crme Frache

  • 1 cup Heavy Cream (whipping)
  • 2 tablespoons Buttermilk (cultured)
